Pesto Rosso

Ready for an incredibly easy recipe that gives you the instant feeling of being in Italy with only six ingredients and a dash of spices? Here we go.

One day I brought a selection of homemade pesto, grissini and bread to work. One of my colleagues who was a strict vegan for five years, immediately tried it despite it containing parmesan and told me, its so good that he can't stop smiling. He almost finished one jar by himself! Some people prefer keeping recipes to themselves, but I truly love sharing anything that I am passionate about.


Let's get started with minimum effort for maximum taste.


Ingredients


1 cup semi-dried tomatoes in oil

3-4 cloves of garlic (I take big cloves)

1 cup fresh basil

1/4 cup pine nuts (feel free to replace with walnuts/cashew/etc)

1/3 cup parmesan

1/3 cup olive oil

pinch of chilli

salt and pepper










Method


It could not be easier!


Simply wash the basil, pat it dry and put all ingredients in a blitzer. I add the olive oil after blitzing for about 20 seconds, depending on how much is needed.


Blitz 'till chunky or go as smooth as you wish.


Finally, use chilli flakes, salt and pepper to top off.
